Healthy Pecan Pie


Okay, this one I got online somewhere, and I can't actually remember where! It was a little different from your traditional pecan pie, but I thought it was pretty good. (Of course, I have a more health-trained palate than most people. I think a few of Dave's relatives thought it was a little weird!)
1 basic pie crust (I used this one)
3/4 cup pecan halves
3 eggs
1/4 cup butter or coconut oil, melted
1/4 cup blackstrap molasses (I got mine from Amazon Ship and Save--Wholesome Sweeteners Fair Trade Organic Molasses, 32-Ounce Bottles (Pack of 3)
1/2 cup maple syrup, honey, or brown rice syrup (I used honey)
1 tsp vanilla
few drops brown rice vinegar (I omitted this because I didn't have it with no adverse results)
3/4 cup chopped pecans

Preheat oven to 350. Place pecan halves in pie crust, rounded side up (you can make a pretty pattern!) Beat together eggs, melted butter, molasses, sweetener, vanilla and vinegar. Stir in chopped pecans. Pour filling into pie crust. Bake 30 to 40 minutes, or until center is set. Cool at least 15 minutes before serving.
